Oooh yeah,  a little Surfer Boy Too Easy Recipe today ladies, we like those now don’t we…?

I have been making this for like ever, it’s tasty, you can throw it in your slow cooker / crockpot and leave it in there while you head down the beach and it feeds those super hungry surfer boys quite nicely without any fussing around when you get back.

I wish I could tell you that I had this when eating curry while in India, but sadly I cannot, the one and only time I went to India was when passing through Mumbai when a particularly nasty epidemic was going around the World and not only were we not allowed to get off of the plane but men in white Ghostbuster style suits came on and sprayed us with chemicals.  That was nice.

No, my dabbling with curry, other than those I have had in Thailand, Hong Kong and China, a different flavour altogether (and I have a crockpot beauty in that mode soon) has been, as any good English girl will tell you, from my local curry house deep in the heart of the English countryside and normally after about 10pm on the way home from the pub.

Hello Mrs Beach Cottage are there any things you miss about your new life in Australia?  Yes indeedy there is, the pubs, the good old BBC and a decent curry house.

No certainly, I do not.

So I love curry but I do not love curry full of colourings and MSG, which I find is in a lot of the curries here and so I, since being Down Under, have dabbled a lot with different curries in my crock pot / slow cooker

I also do love me a cottage that is wafting a lovely heart-warming curry smell from the kitchen, alluding to all that pass and those that live here, that indeed someone has been working very hard chopping and stirring and blending, but when in reality that person threw in a few simple things, turned on the workhorse that sits in the corner on her own quite happily and went off to read blogs.

No,w I have had lovely feedback on my other curry, which is my no-brainer, comfort food, do it with my eyes shut and think of England ooops I mean Australia curry, this one is just as good, but different…nicely different and I am lurving it more every time I cook it in my slow cooker (when I first used to make this it was always on the hob) and surprisingly the Beach Cottage Kiddos really love this one, I thought it might be too hot for them when they were littlies but it’s not (though see notes below).

This uses, wait for it, a jar of curry paste, long gone are the days when I dragged myself around the Indian supermarkets that were in my local town in England and made my own pastes – one baby, no pressure and all that, so the jarred pastes are well and truly good enough for me…sometimes I still do my own but not often…do look out on the back of the jars of this though for anything in the ingredients list that you might not like the look of, like an e-number, I buy Pataks where the ingredients do not have scary names.

Beach Cottage Recipe

Surfer Boy Curry

easy chicken Rogan Josh

 

4 chicken breasts chopped into chunky bite sized pieces

2 onions chopped

1/2 red chilli finely chopped

2 cloves garlic

1 cup chicken stock

1/2 jar Rogan Josh paste

1/2 cup red lentils

1 x 400g tin tomatoes

2 tbsp vinegar

salt and pepper

to serve : lemons & yoghurt

1. place all ingredients in crockpot

2. cook on high 4-5 hours or low all day

beach cottage rogan josh recipe notes serve over rice and lovely with a few poppadoms (I buy the little packs that you quickly fry)  * a few spoonfuls of yoghurt on top make this a dream  **you may need to adjust the liquid to more or less depending on how long you are leaving it, if leaving it all day you will probably need more stock (my new crockpot cooks hotter unfortunately than my old one hence I would add more stock here if cooking all day), on the other hand you may need to leave the lid ajar at the end of cooking if you want it a bit thicker.  * I up the chilli for my portion in this but my kiddos don’t like it hot  ** if you love garlic like me throw a few more cloves in ** I use my rice cooker with this – pop your rice cooker on before you go out too and when you come home all you need is a few veggies and to serve from these two little beauties on your counter, love that
